Ribeye w/ Miso Butter
Perfectly seared and finished with a rich red miso butter for deep umami flavor.
Prep List
Steak:
• Ribeye or NY Strip x 1 (12-14 oz)
• Kosher salt x 1 tsp
• Avocado oil x 1 tbsp
• Garlic x 2 cloves
• Thyme x a few sprigs
Red Miso Butter:
• Roland Foods (@rolandfoods) Red Miso x 3 tbsp
• Jalapeño x 1
• Unsalted butter, softened x 8 tbsp
Recipe
Dry Age the Steak (Optional but Recommended)
• Season the steak liberally (about 30% more than you would intuitively) on all sides.
• Place it uncovered on a cooling rack set over a baking sheet and refrigerate for at least 1 hour or up to 5 days.
• Remove from the fridge 90 minutes before cooking to allow it to come to room temperature.
Make the Red Miso Butter
• Char the jalapeño over a flame until blistered. Let it cool slightly, then trim the stem, split in half, remove the seeds, and roughly chop.
• In a food processor, blend the miso, softened butter, and jalapeño until smooth.
• Spoon the mixture onto a sheet of plastic wrap, shape it into a log, fold over the plastic, and roll it tightly while pressing to remove air pockets.
• Twist the ends like a candy wrapper, then refrigerate until firm. (For extra structure, wrap in a second layer of plastic or parchment before chilling.)
Cook the Steak
• Preheat the oven to 375°F.
• Meanwhile, heat a cast iron pan over medium-high heat and add a hefty drizzle of avocado oil.
• Sear the steak for 4 minutes on the first side, then flip.
• Let cook for 1 minute, then immediately add 2 tbsp fresh butter, garlic cloves, and thyme sprigs, and begin basting for 2 minutes.
• Transfer the pan to the oven and cook until the internal temperature reaches 115-130°F, depending on your preferred doneness (it will rise another ~10°F while resting).
• Remove the steak and place it on a cooling rack set over a baking sheet. Pour the remaining infused butter/fat over the steak.
Rest & Serve
• Let the steak rest for 5 minutes before slicing against the grain.
• Place a medallion of the miso butter on top while the steak is still hot and let it melt over the surface.
