Linguini w/ Mint Pesto
When I’m looking for something quick and easy I always have some pesto in the fridge so this dish comes together in less than 5 min. And it is so delicious….
Prep List
Basil x handful
Mint x handful
Pine Nuts x 1/4 cup, toasted
Parmesan cheese x 1/4 cup, grated + more for serving
Olive oil x 1/2-3/4 cup
Kosher salt to taste
Black pepper to taste
Linguini x 1-2 portions
Recipe
In a blender or food processor combine all ingredients. Use as much olive oil as you would like to reach desired consistency.
Meanwhile, bring a pot of salted water to boil and add linguini pasta to cook for the amount specified on the instructions.
Once ready, remove and drain the pasta reserving 1/2 cup of pasta water in the pot. Add the pasta back to the pot with a generous amount of the pesto sauce. Cook until creamy and slightly reduced. Transfer to a serving bowl and top with a generous amount of Parmesan cheese.
