Hamachi Crudo w/ Yuzu
I absolutely love making crudo at home. I source all of my sushi grade fish in LA from either @Mitsuwa or @Santa MonicaSeafood.
Prep List
hamachi x 1/2 lb
yuzu oil x 1 tbsp
maldon flaky salt to taste
yuzu zest to taste (can also substitute lime zest)
Recipe
Slice fish against the grain into 1/4 in slices (if necessary, cut again to achieve 1/4-1/2 in strips) then plate with space in between each piece.
Drizzle yuzu oil over the fish.
Finish with some flaky maldon salt and zest from yuzu (or lime).
