Green Deviled Egg
Custardy yolks whipped with dill salsa verde, drizzled with dill oil, finished with chives, flaky salt, and white pepper.
Ingredients
Egg Base
Eggs x 2
Salt x 1/2 tsp
Baking soda x 1/2 tsp
Filling & Garnish
Dill salsa verde x 1 tbsp
Dill oil x 1 tsp
Olive oil x 1/2 tsp
Chives x to garnish
Flaky salt x to finish
Freshly ground white pepper x to finish
Recipe
Bring a saucepan of water to a boil. Add 1/2 tsp salt and baking soda.
Gently lower in eggs and cook for 8 minutes.
Transfer eggs to an ice bath and shock for 2 minutes.
Peel eggs, slice in half, and remove yolks.
In a medium bowl, mash yolks with dill salsa verde, dill oil, olive oil, and a pinch of salt until smooth.
Spoon or pipe filling into egg whites.
Garnish with chives, flaky salt, and freshly ground white pepper.
To Plate
Arrange eggs on a chilled platter.
Drizzle lightly with extra dill oil if desired.
Serve immediately.
