Chorizo Burger w/ Pickled Daikon & Caramelized Onions
What's your guilty pleasure? Mine is a perfectly cooked cheeseburger. Especially when there is chorizo involved. Elevated with some sweet caramelized onions and pickled radish.
Prep List (per burger portion)
Ground beef x 4 oz
Chorizo x 2 oz, removed from casing if necessary
Kosher salt and black pepper to taste
Olive oil
American cheese x 2 slices
Kewpie mayo x 2 tbsp
Sriracha x 1/2 tbsp
Rice Wine Vinegar x 1/2 tbsp
Optional: Caramelized onions x 1 tbsp
Optional: Pickled carrots & radishes x a bunch
Burger buns, toasted
Recipe
In a prep bowl add the ground beef, chorizo, salt and pepper and mix until well combined. I always recommend to test cook a small bit of the meat mixture in a pan to ensure the seasoning is correct before making anything like burgers or meatballs.
Once ready, form patties with the meat mixture. Heat a small amount of olive oil in a cast iron pan over medium high heat and once hot add the burger pressing down the center to make a dimple. Allow it to cook until well seared then flip and cook for 2 minutes on the other side. Add the American cheese slices and cover with a lid to help the cheese melt. Continue to cook until the burger is seared on the other side, cheese is melted, and internal temp has reached 160F.
Meanwhile, combine the mayo, sriracha, and vinegar in a small bowl.
Toast your burger buns and assemble your burger. Top with your choice of caramelized onions, pickled veggies, and special sauce. Enjoy immediately.
