Charred Shishito Peppers w Truff Sriracha Mayo & Bonito Flakes
This is a quick and easy dish that makes a great snack or appetizer. Its been my recent go-to to begin an asian inspired meal with a kick of umami from the bonito flakes.
Prep List
Egg x 1 yolk
Garlic x 1 clove, minced
Lemon x 1/2, juiced
TRUFF Truffle salt x pinch
TRUFF Truffle oil
Avocado oil
Sriracha to taste
Shishito peppers x handful
Optional: Bonito flakes to finish
Optional: Sesame seeds to finish
Recipe
Add one egg yolk to a large mixing bowl. To the bowl add 1 grated/minced garlic clove, a squeeze of lemon, and a pinch of truffle salt.
Slowly drizzle in oil in a steady stream while whisking consistently until you’ve reached your desired consistency (about 1/2 cup of oil).
Add sriracha and any additional salt or lemon to taste.
Add a drizzle of avocado oil to pan set over medium-high heat. Add shishito peppers and cook until lightly charred. Remove to paper towel lined plate and season immediately w/ truffle salt.
First, plate a dollop of the sriracha mayo. Top with charred shishitos. Garnish with bonito flakes and sesame seeds.
